Laura Vanderbilt has always had a passion for food and a desire to share that passion with others. Her food journey took a turn in 2009 when she purchased cheese-making equipment. After two years of classes, books, and hours of conversation with other cheese-makers the search for a location began. In March of 2011 she was licensed by the state of Texas and began commercially producing cheese. As the customer base grew and the demand for production increased, assistance was needed. In July 2012 Laura's husband, Jeff an organic chemist, retired to help grow the business.

Fresh Grade A goat milk is delivered from two local Texas dairies. The herds are comprised of La Mancha, Nubian, and Alpine breeds. With staggered breeding, the milk is available year around and never frozen. The milk is processed quickly to ensure a fresh-milk taste.
